For a class of 30. Microbes can tolerate minor changes in osmotic pressure but may be killed or inhibited by the osmotic pressure exerted by high concentrations of salt or sugar. Students observe the effect of 6 concentrations of sugar or salt on 5 food spoilage microbes. The application of this principle to food preservation methods is addressed. Requires 7 days from setup to completion.
