Grades 9–12. Students simulate the enzymatic digestion of starch in the body and deduce that their enzyme converts starch to sugar and acts as a catalyst. The activity includes multiple control experiments and requires deductive reasoning. Extensions allow students to observe the effects of pH and temperature on enzyme activity.
