For 32 students working cooperatively in 8 groups of 4. Introduce your students to enzymes and how temperature and concentration affect an enzyme's ability to convert reactants into products. In this activity, students add increasing amounts of the enzyme pectinase to applesauce and observe how much juice is released at various temperatures. They then mathematically depict the effect of increasing enzyme concentration by graphing the volume of enzyme used versus the volume of juice released.
